Lately, we seem to be in this never-ending transition period between winter and spring in New England. Snow, no snow, high 60’s, low 30’s…. But while the weather may not say spring, but the calendar sure does! This Green Tea Spritzer is a great cocktail for early spring. It’s light, and crisp, and the mint ice cubes add just the right amount of color.

Ingredients:

For the Mint Ice Cubes

3-4 sprigs fresh mint leaves, separated
Water

For the Green Tea

2 cups water
4 green tea bags

 

For the Cocktail

Mint ice cubes
1.5 oz vodka
1.5 oz brewed green tea
Squeeze of fresh lime juice
4 oz P&M Ginger Beer
Fresh mint, for garnish

 

Directions:

To make the mint ice cubes, place 1-2 mint leaves in each of the wells of your ice cube tray. Fill the wells with water. Freeze until solid.

To make the green tea, bring the water to a simmer in a small saucepan. Then remove the saucepan from the heat and add the tea bags. Allow the tea bags to steep in the hot water for 30 minutes. Remove and discard the tea bags. Cover and refrigerate the brewed green tea until well chilled.

To make the cocktail, place several of the mint ice cubes into a tall glass. Add the vodka, green tea and a squeeze of fresh lime juice. Stir to combine. Pour over the P&M Ginger Beer and stir gently to combine. Garnish with a sprig of fresh mint, if desired. Serve immediately.
