Green Tea Spritzer
For the Mint Ice Cubes: place 1-2 mint leaves in each of the wells of your ice cube tray. Fill the wells with water. Freeze until solid.
For the Green Tea: bring 2 cups of water to a simmer in a small saucepan. Then remove the saucepan from the heat and add 4 green tea bags. Allow the tea bags to steep in the hot water for 30 minutes. Remove and discard the tea bags. Cover and refrigerate the brewed green tea until well chilled.
Place several of the mint ice cubes into a tall glass.
Add the vodka, green tea and a squeeze of fresh lime juice.
Stir to combine.
Pour over the P&M Ginger Beer, and stir gently to combine.
Garnish with a sprig of fresh mint, if desired.
